Treatment of pectin containing vegetable material with Pectin Methyl Esterase for increased firmness

Pectin Methyl Esterase can be applied in the process disclosed in EP624062 to increase the firmness of any pectin containing material derived from vegetables.

A suitable Pectin Methyl Esterase could be one derived from Aspergillus aculeatus, such a Pectin Methyl Esterase disclosed in EP0696319. A suitable Pectin Methyl Esterase could be the commercial product NovoShape® available from Novozymes.

The vegetable material to be treated may be derived from any part of the plant such as roots, tubers, stems, leaves and/or fruits.
