Abstract

Problem Statement In present world, cooking is accomplished through a pre-defined set of manual steps taken by the cook and by using multiple cooking devices. The manual steps are mostly based on individual experience or at best guided by a recipe. In effect, the cook needs to be physically present at the cooking site to operate the devices, monitor progress and initiate next steps.

Alternatively, robotics and CNC (Computerized Numeric Control) machines can be leveraged for food preparation but it is limited to mass production of same / similar type of food items.

The idea in this article will make it possible to implement a cooking ecosystem which is driven by specifications and catalogues and which can be leveraged to cook variety of food items remotely in an energy efficient way

Though the idea of robotics and CNC (Computerized Numeric Control) for food preparation is prevalent, it is constrained to mass production of same / similar type of food items. Such systems cannot be used to produce different food items without significant manual re-alignments, re-configuration and down time, each time.

The novelty of the present article is that it is a specification driven with respect to capabilities, capacity (inventories) and control (recipe)

This idea can be leveraged and extended to implement smart and scalable cooking ecosystems which will be capable of

1. Better compliance to cooking processes and standards 2. Uniform and predictable outcome (i.e. food quality)

3. Better efficiencies in terms of power consumption (greener), time, cost and manual intervention

Such a system will bring enhance the maturity (and ROI) to food manufacturing process in organized sectors and in restaurants.

Core idea is to define a scalable system (and its methods) to network one or more coking devices with a GUI mobile control and to leverage this ecosystem for cooking food with reduced physical presence and manual interventions.

The system comprises of a network of

1. One or more cooking devices with advance capabilities (henceforth referred to as A Cooking Device). Minimum pre-requisite of the Cooking device is that a. it should allow wireless information exchange with the Cooking App through the Cooking Controller

     b. have one or more cooking capabilities c. have capability to manage the ingredient inventory d. support cooking based on specifications and catalogues
2. A web / mobile application (henceforth referred to as A Cooking App)

a. For creating and managing metadata in Cooking Controller w.r.t. specifications for ingredients, capability and recipe

b. For creating and managing master data in Cooking Controller w.r.t.

catalogues for ingredients, capability and recipe

     c. For downloading / creating recipe specifications d. for registering the cooking device/s on Cooking Controller e. updating the ingredient specifications on Cooking Device after manual intervention f. updating the capability specifications on Cooking Device after manual repair g. detect Cooking Devices, inspect feasibility of recipe and invoke cooking process 3. A server (henceforth referred to as Cooking Controller) which will
a. Act as Server for mobile / web application

b. Register (along with location coordinates) and initialize Cooking Devices and host the list of registered Cooking Devices

c. Interact with the Cooking Device for the cooking process d. Analyze historical details of Cooking Devices to suggest best option for executing current recipe e. Host the metadata for specifications related to capability, ingredients and recipe f. Host the master data for catalogues for capability, ingredients and recipe g. Register and initialize Cooking Devices and host the list of registered C...
